Thick & Chewy Chocolate Chip Cookies

Let’s start with our favorite tried-and-true, traditional chocolate chip cookie recipe. I’ve been using this recipe for years and it’s been a hit at every potluck!

Ingredients

  • 1 cup butter
  • 1 cup white sugar
  • 2 eggs
  • 2 ½ cups all-purpose flour
  • 2 teaspoons vanilla extract
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups semisweet chocolate chips

Preparation

  • Preheat oven to 350 degrees
  • In a bowl, beat butter, sugar, eggs and vanilla extract until it’s blended well and near smooth consistency.
  • Using another bowl, mix together the flour, baking soda and salt. Stir unto the butter mixture until it is well incorporated. Stir in the chocolate chips.
  • With a spoon, drop a spoonful of dough onto a buttered baking sheet. Leave 2 inches between each ball of dough.
  • Bake for 8-10 minutes. Let stand 5 minutes before transferring cookies to cooling racks.

Maple Bacon Chocolate Chip Cookies

If you know someone who doesn’t enjoy the good ol’ chocolate chip cookie, but would devour anything covered in bacon, here’s a bacon-lover’s version we’re sure they’ll love!

Ingredients

Simply use the Thick & Chewy Chocolate Chip Cookie Recipe we provided above, but add bacon!

Preparation

  •  Grab your bacon of choice (my personal favorite is maple bacon) and while your oven is preheating, place your bacon in a large skillet and cook over medium-high.
  • Flip the bacon occasionally until it is brown on both sides and set the cooked bacon on a paper towel.
  • Once cool, cut or crumble the bacon stir in the bacon bits along with the chocolate chips.

Oatmeal Chocolate Chip Cookies

Although oatmeal cookies are still an indulgence, they are packed with fiber, which reduces your bad cholesterol level and decreases your risk of heart disease. If you’re feeling a little “health conscious,” go for this delicious oatmeal chocolate chip cookie recipe instead!

Ingredients

  • ½ cup coconut sugar
  • 1/3 cup coconut flour
  • 2 tablespoons melted coconut oil
  • 2 eggs
  • dairy free dark chocolate chips
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 teaspoons vanilla extract

Preparation

  • Preheat oven to 350 degrees
  • In a bowl, beat coconut oil, sugar, eggs and vanilla extract until it’s blended well and near smooth consistency.

If you’re an ice cream lover, you’re sure to love this easy-to-make ice cream sandwich!

Ingredients

  • 1 Batch of our Thick and Chewy Chocolate Chip Cookies
  • Quart of your favorite ice cream

Preparation

  • First, bake a batch of our Thick and Chewy Chocolate Chip Cookies and grab a quart of your favorite ice cream. Let the ice cream sit at room temperature for 10 minutes to soften.
  • Turn one cookie over and smear one or two scoops of ice cream onto the cookie. Place another cookie on top of the ice cream and squeeze the cookies together.
  • For extra sweetness, roll the edges in chocolate chips, sprinkles or nuts! If you want to save the cookie sandwich for later, place it in a plastic zip lock bag and place in your freezer.
