I love sandwiches, and in celebration of National Sandwich Day, I thought it would be fun to share a few delicious sandwich recipes that are not only delicious and easy to make, but healthy, too! There are so many ingredients that you can serve up on a sandwich, and many ways to get creative with your toppings depending on your palate. Break out your sandwich spreaders & carving boards, and share these yummy sandwiches with your friends and family.
Turkey & Apple Cranberry Butter Grilled Cheese
Ingredients:
2 slices of whole grain bread or gluten free bread
4 oz of sliced turkey (smoked or oven roasted)
1 tablespoon of apple cranberry butter
Sliced white cheddar cheese
¼ cup of arugula (optional – I love it on my grilled cheese)
Cooking spray
Cooking Instructions:
Heat a non-stick pan over medium heat, and apply a small amount of cooking spray.
Spread apple butter over the surface of each piece of bread.
Top one side with a slice of cheese and the turkey breast, then the other side with a slice of cheese and arugula (optional).
Close both sides of the sandwich together and cook in the pan for 2 minutes on each side, or until browned and cheese is melted and enjoy!
Roasted Beet & Arugula Sandwich
Ingredients:
2-3 roasted beets
1 baguette
Spreadable goat cheese
1 clove of garlic
olive oil
salt and pepper
Instructions
Preheat oven to 375°. Wash and cut tops off beets and wrap them together in an aluminum foil packet. Place in oven for about 45 minutes or until beets can be pierced with a fork. Once cooked, run under cool water, and using your hands, slip the peels off. Slice beets thinly then set aside.
Slice baguette in half and drizzle with olive oil, then rub with garlic clove. Place in broiler or toaster until it’s a bit crispy and has slightly browned. Rub with garlic clove again if you like.
Spread goat cheese on bottom half of baguette, then layer beet slices on top. Add arugula and finish off with a sprinkling of salt and pepper.
Balsamic Strawberry Avocado Sandwich
Ingredients:
2 Slices whole wheat bread, toasted
1/4 avocado, mashed
1/4 C. sliced strawberries
1 tbsp. reduced fat feta cheese crumbles
2 slices of swiss or havarti cheese
1/2 tbsp. balsamic vinegar
Instructions:
Set the oven to broil at 550 degrees F.
Place bread on baking sheet and spread the mashed avocado on each piece, followed by the sliced strawberries.
Sprinkle with feta and drizzle on the balsamic vinegar.
Top with the sliced cheese and place under the broiler until the cheese is nice and melted.
Carefully remove the pan from the oven and place one half of the sandwich on top of the other.
