Celebrate National Picnic Month in Style

August is national picnic month! It’s a perfect time to enjoy the amazing weather and the fresh produce that the summer season has to offer. Here are some fab, fresh and easy tips to help you have a fabulous picnic.

To plan the perfect meal, start off by taking a trip to your local farmers market. Don’t be afraid to dig into all the delicious veggies & berries that summer has to offer. Next, follow these easy recipes that will help you incorporate your fabulous farmers market finds.

Cranberry Apple Pecan Chicken Salad Sandwich
2 boneless skinless chicken breast cooked, and shredded
1 granny smith apple cut into cubes
½ cup dried cranberries
½ cup pecan halves
1 stalk of celery, chopped
1/3 cup mayonnaise
Juice from half of a lemon
Salt and pepper
2 Croissants

Directions: Mix all ingredients together. Spread salad onto croissants and serve.

Mint Fruit Salad with Honey-lemon Dressing
2 peaches, sliced
2 nectarines, sliced
2 cups watermelon, cubed
1 cup strawberries, sliced
1 kiwi, sliced
½ cup of blueberries
¼ cup pomegranate perils
I lemon juiced
1 tbsp. honey
5 sprigs of mint

Directions: Mix all fruits together. Whisk lemon and honey together and drizzle over the fruit. Top with mint leaves. Refrigerate for one hour before serving.

Pesto Bowtie Pasta Salad
2 cups bowtie pasta, cooked
1 cup cherry tomatoes, cut in halves
½ cup fresh basil leaves
½ cup mozzarella balls
1 cup fresh snap peas cut into small slices
4 oz can of pesto sauce

Directions: Mix all Ingredients together. Refrigerate for one hour before serving.

Easy Guava Lemonade
3 guavas, peeled
1 large lemon, peeled
5 cups water
Simple syrup

Directions: Place all ingredients into blender. Blend until smooth. Place in glass container and refrigerate until serving.
