Happy Girl Scout Day! I personally love this time of year because I get to indulge in delicious cookies, as well as support our local Girl Scouts. It feels great to help Girl Scouts run their own cookie business, because they are so passionate, hardworking and super cute! I don’t have the heart to say no. Since I always end up with a ton of cookie boxes, I try to incorporate them into different dessert recipes. See a few recipes I love below!
Cookie Cream Pie
Ingredients:
2 Cups of Shortbread (Trefoils) Cookie Crumbs
5 Spoons of Butter
Caramel Sauce
4 Cups of Vanilla Ice Cream
Directions: Combine the shortbread cookie crumbs and melted butter in a bowl. Place the combined crumbs and butter in a pie. Add the vanilla ice cream to the pie crust and pat down. For a delicious touch, drizzle your pie with caramel sauce. Let it chill in the freezer for a few hours before serving.
Thin Mint Shake
Ingredients:
1/2 Cup of Mint Chip Ice Cream
1/2 Cup of Vanilla Ice Cream
1/2 a Cup of Milk
1 Cup of Ice
7 Thin Mint Cookies
Directions: Combine all the ingredients in the blender. For a creamy and thick shake blend the ingredients for about 2 minutes. If you wish to indulge in a smopther shake, increase the blending time to about 5 minutes.
